Fermentation: 15 days soaking with marc and at a controlled temperature
Refinement: from 6 to 12 month into barrels or wood barrels
Serving temperature: 16°-18° C
Alcohol level: 14 % Vol.
Matching with food: it pairs with full-flavoured, rich dishes such red meat, game and aged cheeses.
Organoleptic characteristics: Canusio is the result of Diomede’s wish to marry Nero di Troia’s classic complexity and marked scent of violets to a crisp fruitiness and early approachability. This wine offers generous, forward aromas and flavours, and at the same time more than adequate structure and body. With its deep ruby red colour, its characteristic scent and its harmonic almond nut taste
